Dorothy’s Unstuffed Cabbage Roll Soup
INGREDIENTS
- Olive Oil splash
- Garlic
- 1 large onion chopped
- 2 pounds of ground beef
- Oregano
- Parsley
- Salt
- Pepper
- 16 oz jar of Marinara sauce
- 2 cups of riced cauliflower
- 5 cups of low sodium beef broth
- 8 cups of sliced green cabbage
METHODS
Heat olive oil and garlic on medium heat
• Add onions and cook till soft
• Add ground beef and cook until browned
• Add seasonings to the beef
• Add sauce and riced cauliflower and broth. Stir well
• Add cabbage and simmer on low covered for about an hour.
** May cook in crockpot for 3 hours on high or 6 hours on low.
