Dorothy’s Tortilla Soup
INGREDIENTS
• 2 whole chicken breasts
• 2 stalks of celery chopped
• 1 whole onion chopped
• 1 carrot chopped
• Garlic chopped
• 2 cups canned chicken broth
• 1 small can fire-roasted tomatoes
• 1 small can of green chilies
• Fresh cilantro
• Monterey Jack Cheese
• Tortilla Chips
• Optional: green onions, avocado, jalapeno, salsa
METHOD
Boil chicken in 3 cups of water. Shred chicken. Reserve liquid.
Sauté celery, onion, carrot, and garlic till soft.
Add reserved liquid from boiling chicken and chicken broth, tomatoes,
and chilies. Bring to a boil and then simmer for 10 minutes.
Serve in bowls with tortilla chips, cilantro, and cheese. May add green
onions, avocado, jalapenos, or salsa on top.
** You can find this recipe on MFP as Dorothy’s Tortilla Soup but it is
the basic with just a few tortilla chips and no cheese or avocado.
